Something that is always in need in our house is a quick meal. After a long day with the kids (me) or a long day at work (him), neither of us wants to do a lot of cooking, but we would both like to eat. This is not a good combination, unless you are our local pizza place. Snickollet wrote about this issue herself a few weeks ago, and had a plethora of responses to her query. Snick, you’ve got some great readers there! Several us at HDYDI have been trying these suggestions, and here is one new favorite. It’s great as a side to go with chicken or something for adults or as a full meal for the kiddos. AND, as a bonus, includes veggies, which was the topic of last week’s Foodie Friday post. By the way, many readers had some great ideas for how to get fruits and veggies into their tots. If you haven’t checked out their suggestions, I recommend it!

Creamy Broccoli with Orzo
Puree a head of boiled broccoli
Add one cup of cooked orzo
Add as much cream sauce as you like (while I make the whole amount, I usually only add about 3/4)
Cream Sauce:
Melt 2 tbs butter in a pan. Add 2 tbs flour and mix over medium heat for one minute. Then slowly add 1 1/4 cup of milk as you mix continuously. Once the sauce thickens, remove from heat and add 1/2 cup of cheddar cheese.
All I can say is, yum.

It does sound yum. Sounds very much like my mac and cheese recipe, but I love the idea of added some pureed broccoli in there.
